Garlic Roasted Potatoes
Total Time: 1 hr. 10 min. Yield: 8 servings
Preheat oven to 450
1. In a bowl, mix olive oil, salt, pepper and garlic.
2. Cut the potatoes in half or in quarters and toss in the bowl of seasonings until they are well coated.
3. Spread the potatoes onto a baking sheet, in one layer. Place in the oven for 45 min. to 1 hour or until brown and crisp. NOTE: Flip with a spatula 2 times while cooking to brown evenly.
4. After you remove the potatoes from the oven, toss them in a bowl with parsley and season to taste.
